Hallo, alle!
     I for one would prefer to see a more period atmosphere with the use of tokens.  The one-set-at-a-time format does not seem such a problem for participants if there is food involved to otherwise occupy them.  Also, it seems that if a gaming table is set up (with period games), then people can enjoy that also if they grow tired of sitting a watching.  Also seems to help the atmosphere feel more real.  The descriptions I have read of dance fetivities (by non-dance masters) always seem to indicate that other things were occuring than watching dance or doing the dances....
