minstrel: Cantigas de Santa Maria and period Catalan music

Greetings all.

My vocal consort just got asked to do something totally unfamiliar to us.
We've been asked to sing at an SCA Catalan-style event at the end of
January. I am looking for sources for music already transcribed into
modern notation and readily available on web, if possible. Our time
constraints are such that we will not have a lot of time to do research
and redaction, owing to a very busy Yuletide schedule. 

Knowing absolutely nothing about Catalan music, what was the primary
language? Spanish? I found some references to Gallican as well, but am
unfamiliar with it.

Any and all help gratefully recieved and hugely appreciated.
