minstrel: Medieval French

I was wondering what kind of French would have been used in Dunstable's
time. We are singing some music and we are not sure whether to pronounce
all the consonants, or to assume that many of them would be silent as in
modern French. Would the 'ai' be ay? Would the 'oi' still be oy? For
example, how would the word 'dictz' be pronounced? Would the s be silent
in puisque?
Do any of you know of some websites that have information on medieval
French? I used to know all this stuff, but it's been a long time since
college!
