John Renbourn has done a couple of videos teaching medieval and renaissance
pieces on guitar.  I have one and it's very good.  I don't remember the
publisher offhand, sorry.  The tape comes with a book of the songs in TAB
format.

You can get guitar tablature of some of Renbourn's arrangements, including a
number of period pieces, from Kicking Mule Records.
