minstrel: Dynamics and tempo variants

Yesterday, following a performance of a broadside ballad, I received
conflicting counsel.  Specifically, opinion differed over the use of
crescendo and dimeundo (as opposed to terraced dynamics) and tempo variation
(versus strict meter).
Anyone care to add to my confusion?
Anyone aware of any resourses discussing period technique for broadsides,
specifically?
