Urk.  The only possibility I'm aware of is if someone has set the poem 
known as "Caedmon's Hymn."   Closest surviving music - Latin words -  would 
be the Winchester Troper (10th century).  I think the current edition of 
the Sarum rite Missal would have some music from this document.  Check the 
early music discography at http://www.medieval.org for recordings.  There's 
a fair bit of stuff from the 13th century on, of course.
