Just as a overview, you might try Games of the World, edited by Frederic V
Grunfeld
ISBN 0-345-25531-3. In the chapter on dice games, he show several
illustrations from Alfonso X's Book of Games (12th Cent) as well as several
later paintings of dice games and examples of period boards for playing dice
games.
