To put a bit of twist on this, what would be better would be a list of
styles, their supposed dates and places of origin, and a list of
primary sources that talk about them. Most such lists turn out to be
garbage, because you have no idea what source is involved, much less
if it's true or fabrication or misunderstanding or whatever.

Most of these primary sources would probably not be "cookbooks", they
would be literary references or guild records or whatever.
