I only do cordials, myself. If you'd like to see some historical
recipes and instructions, check out the webpage at:

The instructions are often sketchy, so people tend to fill in using
modern homebrewing techniques.

I also recommend Cindy Renfrow's book on the topic -- anyone know
of any comparable secondary sources, aimed at someone who already
knows modern homebrewing? I would love to expand the bibliography
which I have on the webpage.
