hist-brewing: Herbless ales

Hello - I'm new to the group.  I'm very happy to find you all.  I'm just
getting started in all grain brewing.   I would like to understand the
ingredients in beer better and have been considering making a beer with no
hops, no herbs; just water, malt, and yeast.  I understand that there was a
time in England where this was done.  Has anyone heard of this, experimented
with it, etc.?  I am looking for advice on recipe/brewing ideas on how to
start.  Any suggestions?
