Why did your 1st mead batch stop fermenting ? what recipe did you use ?
As for a Yule batch I can recommend a recipe I used last winter. The spicing turned out OK but the OG need s to be tweaked a little. A miscalculation/miscalibration set the batch at 2.25% or so instead of the desired 8%. The recipe can be found at

the OG should be around 1.070 and FG about 1.010 for an abv of 8%. The spicing turned out OK, rating in the top 3 at a test of 12 swedish xmas beers last year.
I'll make a new batch like this but with higher OG and some ginger as well the next week (if I can find the time for it) If you use the recipe i suggest you use about twice the pale ale, amber and chrystal malt listet to raise the OG If you use more chocolate malt or black malt please add some CaCO3 to raise the pH of the mash.
I'll post more details of the modified recipe in October.
