I wouldn't bother myself with the math.  It's only going to have a positive
effect, right?  :-)

Somewhere out there is a table with both sugar content and acidity of
fruits, but to my shock and horror I seem not to have bookmarked it.  You
might get 11 points x USGal/lb or something like that.
