hist-brewing: Root Beer

I have received requests for the Root Beer recipe here it is for those who want it.

1 oz Wintergreen Leaves					original gravity   1034
2 oz Indian Sarsaparilla
1 TBSP Sarsaparilla Extract
8 cups Cane Sugar (C&H) (grocery store sugar) Do NOT Use corn sugar
1/2 tsp. Premier Cuvee yeast ( rehydrated in 1 cup of warm water, approx. 90º for 15 minutes)


Bring 2 gallons water to a boil, add wintergreen leaves and Indian Sarsaparilla (put them in a large straining bag), to the boiling water, cover and turn off heat. Let stand for two hours to infuse the flavors into the water. Remove Wintergreen leaves and Sarsaparilla from the water, add sugar and stir until dissolved. Add 3 gallons of cool water, 1 Tbsp. of Sarsaparilla extract, and the re-hydrated yeast. Mix well then fill and cap bottles. Leave set at 65º  to 80º  for 3 - 7 days. Check for carbonation.  When carbonated refrigerate to stop additional fermentation and bursting bottles !!	Chill and drink .


A few tips :
*  Use filtered or pre-boiled water for best results
* Fill a few plastic soda bottles, you can squeeze them to check for carbonation
* If kegging your soda, do not use the yeast, just chill, carbonate, and serve.
