hist-brewing: Early Medieval Malting?

Does anyone one on this list have references or sources for Early Medieval
(ie: anglo-saxon, but any other is fine too) Malting techniques? I have
16th century source (markham, and harrison) that do a good job of
describing it, but i would like some other sources for earlier stuff.  I
would like to do the Domesday Ale, but i would like some hard data on
malting tequniques so i can approximate the malt.

Anglo-Saxon Food doesn't cover it, they refer to Harrison (16th cent)
